Ingredients list
- 4 Fresh salmon fillets
- 1 knob fresh ginger, finely grated
- 2 shallots, finely sliced
- Zest of 1 lime
- 1 fresh red chilli, finely sliced
- 2 coriander roots, cleaned and chopped
- 2 spring onions, finely sliced
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp ABC sweet soy sauce (kecap manis)
- 1 tbsp peanut oil
- 1 tsp fish sauce
Method
- Preheat the oven to 180°C (350°F).
- Line a baking tray with baking paper and place the salmon fillets on top.
- Scatter grated ginger, sliced shallot, lime zest, fresh chilli, coriander root, and spring onion over the salmon.
- Drizzle over the soy sauce, sesame oil, ABC sauce, peanut oil, and fish sauce.
- Bake in the oven for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- To serve, top with extra sliced spring onion, a squeeze of fresh lime juice, chilli, fresh coriander, fried shallots, and an extra drizzle of ABC sauce and fresh chilli if desired. Serve with steamed rice, noodles, or a fresh salad.
