Ingredients list
- 1.5–2 kg beef brisket
- 1 large brown onion, sliced
- 4 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano (or fresh oregano if available)
- 3–4 sprigs fresh thyme
- 2 teaspoons salt
- 1 teaspoon cracked black pepper
- 1/2 cup barbecue sauce (plus extra for serving if desired)
- 2 tablespoons olive oil (optional, not essential in this method)
Optional for serving:
- Soft bread rolls Coleslaw
- Extra barbecue sauce
Method
- Prepare the base: In a large ovenproof pot or Dutch oven, layer the sliced onions, minced garlic, fresh oregano, and thyme.
- Prepare the brisket: Preheat the oven to 160°C (320°F). Pat the brisket dry with paper towels. In a small bowl, mix the smoked paprika, cumin, salt, and pepper. Rub the spice mix all over the brisket.
- Assemble: Place the brisket on top of the onions in the pot. Pour the barbecue sauce over the brisket. Pour the barbecue sauce over the brisket. Cover tightly with a lid.
- Cook: Bake in the oven for 3.5 to 4 hours, until the brisket is fork-tender and easily pulls apart. Remove the brisket from the pot and shred using two forks. Return the shredded brisket to the sauce and mix through. Serve in soft bread rolls with coleslaw and extra barbecue sauce if desired.
