Ingredients list
- 1 large tortilla (approx. 10-inch)
- 3 large eggs
- ¾ cup cottage cheese
- 1 cup fresh spinach, chopped
- ½ cup cherry tomatoes, halved
- ½ cup shredded mozzarella or cheddar cheese
- Salt and pepper, to taste
Method
- Preheat your oven to 175°C (350°F).
- Lightly grease a round baking dish or pie plate.
- Place the tortilla in the dish, pressing it to form a crust along the bottom and sides.
- In a mixing bowl, whisk together the eggs and cottage cheese.
- Stir in the chopped spinach and cherry tomatoes.
- Season the mixture with salt and pepper to taste.
- Pour the egg mixture over the tortilla in the baking dish.
- Sprinkle the shredded cheese evenly over the top.
- Bake for 20–25 minutes, or until the eggs are set and the top is golden brown.
Allow to cool slightly before slicing and serving.
