High Protein Tortilla Bake

Ingredients list

  • 1 large tortilla (approx. 10-inch)
  • 3 large eggs
  • ¾ cup cottage cheese
  • 1 cup fresh spinach, chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup shredded mozzarella or cheddar cheese
  • Salt and pepper, to taste

Method

  • Preheat your oven to 175°C (350°F).
  • Lightly grease a round baking dish or pie plate.
  • Place the tortilla in the dish, pressing it to form a crust along the bottom and sides.
  • In a mixing bowl, whisk together the eggs and cottage cheese.
  • Stir in the chopped spinach and cherry tomatoes.
  • Season the mixture with salt and pepper to taste.
  • Pour the egg mixture over the tortilla in the baking dish.
  • Sprinkle the shredded cheese evenly over the top.
  • Bake for 20–25 minutes, or until the eggs are set and the top is golden brown.

Allow to cool slightly before slicing and serving.
