Tina’s Roast Feta Pasta

Ingredients list

  • Block of feta
  • 1 cup cherry tomatoes
  • 1 cup of red and yellow peppers, roughly chopped into large pieces
  • Handful of Kalamata olives, pitted and chopped
  • Spring onion, chopped
  • Dried oregano
  • Orzo or Risoni
  • Olive oil
  • Parsley, chopped
  • Salt and pepper

Method

  • Preheat your oven to 180°C (350°F)
  • Place the block of feta cheese into the centre of a baking tray.
  • Scatter the chopped cherry tomatoes, peppers, spring onions, and pitted olives around the feta.
  • Drizzle with olive oil and season with salt, pepper, and oregano.
  • Bake in the oven at 180°C for 25 minutes, or until the feta is softened and the vegetables are tender.
  • Once out of the oven, use a fork to break up the softened feta and mix it with the vegetables.
  • Stir in some cooked orzo and garnish with freshly chopped parsley.
