Barbecued Greek Lamb Chops

Ingredients list

  • 8-10 Lamb chops

Marinade

  • Olive oil
  • 2 tbsp cracked black pepper
  • 2 tbsp garlic granules
  • 3 tbsp dried oregano
  • 1 lemons rind
  • Fresh rosemary

Dressing

  • ¼ cup olive oil
  • Juice of 1 lemon
  • 2 tbsp salt
  • Fresh oregano – torn

Method

  • To prepare the marinade, add all the ingredients to a baking tray and mix together. Add more olive oil if the marinade looks too dry.
  • Press the lamb chops into the marinade, ensuring both sides are evenly coated and
  • Place the chops in the fridge for a minimum of 2 hours
  • Preheat the BBQ and cook the lamb chops to your liking, basting with rosemary sprigs.
  • For the dressing, combine olive oil, lemon juice, fresh oregano, and salt.
  • Pour the dressing over the cooked lamb chops.
  • For extra flavour, brown your leftover lemons on the BBQ and squeeze them over the cooked chops.
  • Serve with coleslaw or a side salad of your choice.
