Ingredients list
- 10-12 Mini Bell Peppers, Orange
- 1 Bunch of dill fronds (for the “carrot” leaves)
Herb Cream Cheese Filling
- 4 oz Cream cheese, softened
- 3 tablespoon sour cream
- 1 Chopped scallion
- 1 tablespoon freshly chopped dill
- 1 tablespoon freshly chopped parsley
- ⅛ teaspoon salt
Method
- Prepare the base: Spread a thin layer of cream cheese on a small cracker
- Assemble the bunny body: Place a mini boiled egg on top of the cream cheese (this helps it stick).
- Create bunny ears: Cut small slices of cucumber into ear shapes. Insert two cucumber “ears” into the top of the egg.
- Add facial features: Dot two black sesame seeds onto the front of the egg to form eyes (the cream cheese will help them stick). Use a tiny piece of carrot for the nose.
- Decorate further (optional): Tie a small chive around the “neck” of the egg as a scarf. Add thin slices of radish or extra cucumber around the cracker for garnish.
