Orzo Tuna Salad

Ingredients list

Dressing

• ½ cup virgin olive oil
• ¼ cup red wine vinegar (or white)
• Half a lemon
• ½ teaspoon dried oregano
• ½ teaspoon salt
• ½ teaspoon ground pepper
• Pinch of chilli flakes
• 2 teaspoons honey

Salad

• Cooked orzo
• Cucumber
• Cherry tomatoes
• Crumbled feta cheese
• Olives
• Red pepper
• Chives/ shallots
• Tuna in oil
• Fresh basil
• Fresh parsley

Method

• Prepare dressing: Combine all dressing ingredients in a jar or bowl. Shake well to emulsify, or use a whisk to mix thoroughly.
• Prepare salad: In a serving bowl, combine all chopped salad ingredients, canned tuna, and herbs. Mix everything together well.
• Drizzle the prepared dressing over the salad mixture in the serving bowl. Toss gently to coat the salad evenly with the dressing.
• To service, sprinkle crumbled feta cheese and fresh parsley over the salad. Serve and enjoy.

You can create this salad using any vegetables you have in your fridge! Feel free to mix and match the ingredients according to your personal preferences
