Ingredients list
- 1/8 head of cabbage, shredded
- 4 small radishes, shredded
- ¼ cup shredded parsley
- ½ cup chopped spring onions
- ¼ cup chopped fresh mint
- ⅔ cup shaved Parmesan cheese
- 1 teaspoon salt and pepper (or to taste)
- 1 tablespoon toasted pine nuts (for serving)
For the Dressing:
- ⅓ cup olive oil
- 3 teaspoons honey
- Juice of 2 lemons
- 1 tablespoon Dijon mustard
- 1 teaspoon salt and pepper
Method
- Using a mandolin or a sharp kitchen knife, finely shred the cabbage and radish.
- In a large bowl, combine the shredded cabbage and radish with the pine nuts, parsley, spring onions, fresh mint, and Parmesan cheese.
- In a separate bowl, whisk together the dressing ingredients until well emulsified.
- Toss the dressing through the cabbage salad mixture.
- Transfer the salad to a serving bowl and top with toasted pine nuts and extra shaved Parmesan.
