Blanched Bean Side Dish with Prosciutto & Almonds

Ingredients list

  • 300g green beans, trimmed
  • Salt (for boiling water)
  • 12 slices of prosciutto
  • ¼ cup almond flakes
  • Olive oil (for drizzling)

Method

  • Blanch the beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 2–3 minutes, until bright green and slightly tender. Immediately transfer them to a bowl of ice water to stop the cooking. Let sit for 2–3 minutes, then drain and pat dry.
  • Wrap the beans: Bundle 5–6 blanched beans together and wrap each bundle with a slice of prosciutto. Lay them seam-side down on a lined baking tray.
  • Add the finishing touches: Sprinkle almond flakes over the bundles and drizzle with olive oil.
  • Bake: Bake in a preheated oven at 180°C (350°F) for 10–15 minutes, or until the prosciutto is crispy and the almonds are golden.
