Ingredients list
- 300g green beans, trimmed
- Salt (for boiling water)
- 12 slices of prosciutto
- ¼ cup almond flakes
- Olive oil (for drizzling)
Method
- Blanch the beans: Bring a large pot of salted water to a boil. Add the green beans and cook for 2–3 minutes, until bright green and slightly tender. Immediately transfer them to a bowl of ice water to stop the cooking. Let sit for 2–3 minutes, then drain and pat dry.
- Wrap the beans: Bundle 5–6 blanched beans together and wrap each bundle with a slice of prosciutto. Lay them seam-side down on a lined baking tray.
- Add the finishing touches: Sprinkle almond flakes over the bundles and drizzle with olive oil.
- Bake: Bake in a preheated oven at 180°C (350°F) for 10–15 minutes, or until the prosciutto is crispy and the almonds are golden.
