Caramelised Peaches with Brioche or Tsoriki

INGREDIENTS

  • 1 vanilla bean
  • ½ cup pure maple syrup
  • ½ cup freshly squeezed orange juice
  • 4 yellow or white peaches, halved and pitted
  • Sliced brioche or Tsoriki
  • ¾ cup pouring cream

METHOD

  • Preheat your oven grill to 160°C.
  • Slice the vanilla bean lengthwise and scrape out the seeds. Place both the seeds and the pod into a baking tray.
  • Halve and pit the peaches, then add the maple syrup and orange juice to the tray. Stir gently to coat. Arrange the peaches cut-side down.
  • Grill the peaches for 10 minutes, turning after 5 minutes, until tender and sticky. If the liquid evaporates too quickly, add a splash of water to keep the peaches moist.
  • Toast the brioche or Tsoriki slices on both sides. Top with the caramelised peaches and serve with fresh pouring cream.
