Cheesy Packet Potatoes

INGREDIENTS

  • 1 cup sour cream
  • 2 cups grated cheddar cheese
  • ½ cup cream cheese
  • ½ cup fresh parsley, chopped
  • 6 red Pontiac potatoes (or adjust for desired servings)

METHOD

  • Preheat your oven to 180°C.
  • Slice the potatoes into medium-thick slices, keeping the base intact so they hold together.
  • Place a small piece of parchment paper for each potato. Carefully transfer each sliced potato onto the parchment and gently press the slices into a fanned shape.
  • In a bowl, combine the sour cream, cream cheese, grated cheddar, and parsley to make the cheese sauce. Mix until well combined.
  • Spoon the cheese mixture over each fanned potato, spreading evenly.
  • Wrap each potato in its parchment to form a mini parcel. Secure the ends with a toothpick if needed.
  • Arrange the parcels on a baking tray and roast in the oven for 45 minutes, or until the potatoes are tender (test with a toothpick).
