Cheesy Packet Potatoes

INGREDIENTS
- 1 cup sour cream
- 2 cups grated cheddar cheese
- ½ cup cream cheese
- ½ cup fresh parsley, chopped
- 6 red Pontiac potatoes (or adjust for desired servings)
METHOD
- Preheat your oven to 180°C.
- Slice the potatoes into medium-thick slices, keeping the base intact so they hold together.
- Place a small piece of parchment paper for each potato. Carefully transfer each sliced potato onto the parchment and gently press the slices into a fanned shape.
- In a bowl, combine the sour cream, cream cheese, grated cheddar, and parsley to make the cheese sauce. Mix until well combined.
- Spoon the cheese mixture over each fanned potato, spreading evenly.
- Wrap each potato in its parchment to form a mini parcel. Secure the ends with a toothpick if needed.
- Arrange the parcels on a baking tray and roast in the oven for 45 minutes, or until the potatoes are tender (test with a toothpick).
