Chocolate Ripple Cake

Ingredients list
- Chocolate ripple biscuits (approx. 200–250g, or enough to form a circle)
- 1 cup heavy cream
- 1 cup chocolate-flavoured Baileys
- Fresh strawberries, halved
- Chocolate shavings, for decoration
Method
Prepare the cream: In a bowl, whip the heavy cream until soft peaks form. Gently fold in the chocolate-flavoured Baileys.
Assemble the cake: Spread cream on one side of a chocolate ripple biscuit. Arrange the biscuits in a circle on a serving platter, pressing the creamed sides together to form a ring. Continue sandwiching biscuits with cream until the circle is complete. Then using a spatula spread a layer of cream over the entire cake, covering all biscuits.
Chill: Refrigerate the cake overnight to allow the biscuits to soften and the flavours to meld.
Decorate and serve: Before serving, top with chocolate shavings and fresh strawberries.
