Classic Christmas Ham

Ingredients list
- 1 whole ham (skin removed and saved for later)
- 2 cups brown sugar
- 1 cup honey
- 1 cup apple cider vinegar
- Fresh ginger, grated (to taste)
- 1 tsp garlic powder
- 1 tsp nutmeg
- Pinch of cloves
- 1 tbsp mango chutney
- Whole cloves (for studding the ham)
- 2 peaches, halved
- Splash of water
Method
Prepare the ham:
- Remove the skin from the ham and save it for later (do not discard).
- Cross-hatch the surface of the ham with a knife.
- Place the ham in the oven and cook plain at 200°C for 30 minutes.
Make the glaze:
- In a saucepan over low heat, combine brown sugar, honey, apple cider vinegar, grated ginger, garlic powder, nutmeg, a pinch of cloves, and mango chutney.
- Stir continuously until the glaze is smooth and slightly thickened.
Glaze the ham:
- Remove the ham from the oven. Insert whole cloves into the cross-hatched sections.
- Brush the glaze generously over the ham, making sure to cover the ends and get into all the nooks and crannies. Keep some glaze aside for basting.
Bake with glaze:
- Reduce oven temperature to 160°C.
- Return the ham to the oven and cook for 1 hour, basting with the reserved glaze every 15 minutes to keep it moist and juicy.
Add peaches:
- Press peach halves into brown sugar in a small baking dish, pour in a splash of water, and cover with foil.
- Cook in the oven for a further 10 minutes until tender.
Serve:
- Remove the ham from the oven, slice, and serve with the glazed peaches. Enjoy!
Tip: If you have leftover ham, wrap it in the reserved skin before storing — this helps keep the meat moist and full of flavor for several days.
