Cranberry and Brie scrolls

Ingredients list

  • 1 wheel of Brie cheese, sliced into strips
  • Whole cranberry sauce
  • 1/4 cup chopped pecans
  • 1 sheet puff pastry, cut into strips
  • Egg wash (1 egg and 1 cap of milk)

Method

  • Preparation; Place the wheel of Brie in the freezer for at least 30 minutes before using it in this recipe.
  • Remove the puff pastry from the freezer 15 minutes before you're ready to use it.
  • Preheat your oven to 160°C and spray a muffin tray with extra virgin olive oil.
  • Remove the Brie from the freezer and slice it into strips (one strip per serving). Set aside.
  • Slice the puff pastry into strips, making sure each strip is slightly wider than the Brie slices.
  • Spread a thin layer of whole cranberry sauce on each pastry strip, then place a Brie slice on top. Sprinkle crushed pecans over the Brie.
  • Roll each pastry strip into a spiral and place it in an individual muffin cup.
  • Brush each pastry with an egg wash (1 egg mixed with a cap of milk).
  • Bake in the preheated oven for about 10 minutes, or until golden brown.
  • Carefully remove the Brie appetizers from the muffin tray and transfer them to a serving plate.

Notes

  • Keep a close watch on your pastries while baking, as they can quickly go from golden brown to burnt!
