Creamy Tzatziki

Ingredients list

  • 1 cup Greek yoghurt (full-fat for creaminess)
  • 1/2 large cucumber, grated
  • 1 garlic clove, minced or finely grated
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh chives & parsley (or dill)
  • Salt and pepper, to taste

Method

  • Strain the Yoghurt: Place the Greek yoghurt in a clean cotton towel or cheesecloth set over a strainer and bowl. Let it sit for 10–15 minutes to drain any excess liquid. This step helps make the tzatziki extra thick and creamy.
  • Prep the Cucumber & Herbs: Grate the cucumber and squeeze out the moisture using a clean towel or paper towel. Finely chop up fresh chives and parsley.
  • Combine Ingredients: In a mixing bowl, combine the strained yoghurt, cucumber, garlic, olive oil, lemon juice, and chopped herbs. Season with salt and pepper to taste.
  • Serve up with fresh crackers, and garnish with extra fresh herbs or olives. Otherwise, cover and refrigerate for 30 minutes to let the flavors meld prior to serving.
