Cucumber Boats

Ingredients list

  • 3 Lebanese cucumbers, halved lengthwise
  • 1 tin tuna, drained
  • 1 cup cherry tomatoes, chopped
  • ¼ cup red olives, chopped
  • 1 cup shredded lettuce
  • ½ cup feta, cut into small cubes
  • 2 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 2–3 tbsp mayonnaise (to taste)
  • Lemon wedge, to serve

Method

  • Slice cucumbers in half lengthwise and use a melon baller or spoon to gently scoop out the seeds, creating a “boat.”
  • In a bowl, mix together the tuna, cherry tomatoes, red olives, lettuce, feta, parsley, chives, and mayonnaise until well combined.
  • Spoon the filling evenly into the cucumber halves.
  • Finish with a squeeze of lemon juice over the top.
  • Serve immediately and enjoy!
