Ingredients list
- 3 Lebanese cucumbers, halved lengthwise
- 1 tin tuna, drained
- 1 cup cherry tomatoes, chopped
- ¼ cup red olives, chopped
- 1 cup shredded lettuce
- ½ cup feta, cut into small cubes
- 2 tbsp chopped parsley
- 1 tbsp chopped chives
- 2–3 tbsp mayonnaise (to taste)
- Lemon wedge, to serve
Method
- Slice cucumbers in half lengthwise and use a melon baller or spoon to gently scoop out the seeds, creating a “boat.”
- In a bowl, mix together the tuna, cherry tomatoes, red olives, lettuce, feta, parsley, chives, and mayonnaise until well combined.
- Spoon the filling evenly into the cucumber halves.
- Finish with a squeeze of lemon juice over the top.
- Serve immediately and enjoy!
