Easy, No-Cook Christmas Parfaits

INGREDIENTS

Sweeter Version:

  • 2 cups cooked meringue, broken into pieces
  • 4 tbsp cream
  • 1 cup fresh berries
  • 1 cup raspberry jelly (packet mix)
  • 1 tbsp raw honey
  • 2 tbsp ginger & rhubarb compote (store-bought)
  • Flaked chocolate or nuts, to serve

More Savoury Version:

  • 4 tbsp granola
  • 4 heaped tbsp full-fat Greek yoghurt
  • 1 cup fresh berries
  • 1 tbsp raw honey
  • ½ cup trail mix
  • 1 crunchy bar, to serve

METHOD

  • There’s no cooking required — these parfaits are all about layering!
  • For the sweeter version, layer meringue pieces, cream, fresh berries, jelly, and compote in a glass or jar. Repeat layers as desired.
  • For the more savoury version, layer Greek yoghurt, granola, fresh berries, honey, and trail mix. Repeat layers as you like.
  • Top with flaked chocolate, nuts, or a crunchy bar for extra texture.
  • Drizzle with honey just before serving and enjoy your festive parfaits!
