Method

  • 1. In a bowl, whisk together eggs, milk, cream, vanilla essence, and a pinch of salt until well combined.
  • 2. Dip each hot cross bun half into the mixture, coating both sides generously.
  • 3. Heat a frying pan over low heat and melt a knob of butter.
  • 4. Cook the buns for 2–3 minutes per side, or until golden and slightly crisp on the edges.
  • 5. Serve warm with a dusting of icing sugar, a handful of fresh berries, and a dollop of whipped cream.
