- 4 hot cross buns, sliced in half
- 2 eggs
- ½ cup milk
- ¼ cup cream
- 1 tsp vanilla essence
- Pinch of salt
- Unsalted butter, for frying
- To serve: icing sugar, fresh berries, and whipped cream
Method
- 1. In a bowl, whisk together eggs, milk, cream, vanilla essence, and a pinch of salt until well combined.
- 2. Dip each hot cross bun half into the mixture, coating both sides generously.
- 3. Heat a frying pan over low heat and melt a knob of butter.
- 4. Cook the buns for 2–3 minutes per side, or until golden and slightly crisp on the edges.
- 5. Serve warm with a dusting of icing sugar, a handful of fresh berries, and a dollop of whipped cream.
