Ingredients list
Marinade:
- 6 chicken breasts
- 1 red chilli, finely chopped
- Zest of 1 lemon
- A handful of fresh sage, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- ½ tsp chilli flakes
- Cracked black pepper, to taste
- 1 tsp dried oregano
- Olive oil
Lemon Dressing:
- Juice of 1 lemon
- Gluten Free
- ¼ cup Uvoila olive oil
- ½ tsp dried oregano
- Chilli salt, to taste
Method
Prepare the Chicken;
- In a large baking dish or bowl, combine all marinade ingredients. Add the chicken breasts and coat thoroughly.
- Cover and let marinate for at least 30 minutes (or longer for deeper flavour).
- Preheat BBQ or grill to medium-high.
- Cook chicken for 6–8 minutes per side, or until charred and cooked through.
Prepare Dressing:
- Whisk all dressing ingredients together until emulsified.
- While the chicken is still hot off the grill, pour over the lemon dressing to allow the flavours to soak in.
- Rest for 1–2 minutes, then serve.
