Jamie Oliver Inspired Pear & Ginger Cake

INGREDIENTS

  • 4 eggs
  • 200g dark brown sugar
  • 200ml olive oil
  • 200g ground almonds
  • 200g self-raising flour
  • 1 tsp baking powder
  • 1 pinch salt
  • A sprinkle of cinnamon
  • 3 tbsp ginger marmalade
  • ½ cup ‘naked’ uncrystallised ginger snacks, finely chopped
  • 1 can pears in syrup
  • 100g 70% dark chocolate

METHOD

  • Preheat the oven to 180°C. Line a cake pan with greaseproof paper — a tip is to slightly dampen and scrunch the paper to help it stay flat.
  • In a large mixing bowl, combine the flour, ground almonds, baking powder, salt, cinnamon, and chopped ginger snacks.
  • Add the eggs, olive oil, ginger marmalade, and 50g of the dark chocolate. Mix until well combined.
  • Pour the mixture into the prepared cake pan and smooth the top. Arrange pear slices on top (reserve the syrup) and bake for 40–45 minutes, or until a skewer comes out clean.
  • While the cake bakes, make the glaze: melt the remaining chocolate with the reserved pear syrup in a small pan over low heat, stirring continuously to prevent burning.
  • Allow the cake to cool slightly before drizzling the glaze over the top. Serve and enjoy!
