Ingredients list
Vegetarian;
- ½ small purple onion, thinly sliced
- 1 small eggplant, thinly sliced
- ½ red capsicum (red bell pepper), sliced
- 1 teaspoon Mexican seasoning
- Pinch of chilli flakes (adjust to taste)
- Salt, to taste
- Grated mozzarella cheese
- 2 large wraps
Chicken;
- Cooked chicken, shredded or chopped
- 1 teaspoon Mexican seasoning
- Pinch of chilli flakes (adjust to taste)
- Salt, to taste
- 1/2 cup cherry tomatoes, halved
- 1/2 cup black beans, rinsed and drained
- 2 tablespoons chopped chives
- Grated mozzarella cheese
- Olive oil (for cooking)
- 2 large wraps
Spice Sauce;
Method
Vegetarian;
- Sauté sliced onion, eggplant, and red capsicum in olive oil with Mexican seasoning, chilli flakes, and salt until softened; sprinkle cheese on top to melt.
- Place a wrap over the veggies in the pan, flip gently, add a second wrap on top to form a sandwich, cook until golden, then remove from heat, chop and serve with spicy sauce.
Chicken;
- In a pan, combine cooked chicken, Mexican seasoning, chilli flakes, salt, cherry tomatoes, black beans, chives, and mozzarella. Cook until warmed through and the cheese starts to melt.
- Place a wrap over the mixture in the pan. Flip gently and add another wrap on top to make a sandwich.
- Cook until golden brown on the bottom, then remove from heat.
- Chop into portions and serve warm with spicy sauce.
