Mini Cherry Panettone

Ingredients list

  • Store-bought panettone
  • 1 cup heavy cream
  • 1 shot Baileys Irish Cream
  • 1 tsp vanilla extract
  • Jarred cherries, drained
  • Icing sugar, for dusting
  • Optional garnish: chocolate Christmas tree or other festive decoration

Method

  • Slice the panettone horizontally into three even layers.
  • In a bowl, whip the heavy cream until soft peaks form. Gently fold in the Baileys and vanilla extract until combined.
  • Spread the whipped cream mixture generously on the bottom layer of panettone.
  • Top with a handful of jarred cherries.
  • Repeat with the second layer: spread cream and add cherries.
  • Place the top layer of panettone on to rebuild the loaf.
  • Dust the entire assembled panettone with icing sugar.
  • Garnish with your choice of decoration, such as a chocolate Christmas tree.
