Orzo Tuna Salad

Dressing- ½ cup virgin olive oil
- ¼ cup red wine vinegar (or white)
- Half a lemon
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ½ teaspoon ground pepper
- Pinch of chilli flakes
- 2 teaspoons honey
- Cooked orzo
- Cucumber
- Cherry tomatoes
- Crumbled feta cheese
- Olives
- Red pepper
- Chives/ shallots
- Tuna in oil
- Fresh basil
- Fresh parsley
Method
- Prepare dressing: Combine all dressing ingredients in a jar or bowl. Shake well to emulsify, or use a whisk to mix thoroughly.
- Prepare salad: In a serving bowl, combine all chopped salad ingredients, canned tuna, and herbs. Mix everything together well.
- Drizzle the prepared dressing over the salad mixture in the serving bowl. Toss gently to coat the salad evenly with the dressing.
- To service, sprinkle crumbled feta cheese and fresh parsley over the salad. Serve and enjoy.
