Pimped-Up Sausage Rolls

INGREDIENTS

  • 4 good-quality pork sausages
  • 200g Swiss brown mushrooms, sliced
  • 1 teaspoon chopped rosemary
  • 2 cups mixed salad leaves
  • 4 long brioche buns, toasted and buttered
  • ½ cup aioli
  • ⅓ cup cornichons (mini pickles)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon relish or sauce of choice

METHOD

  • Slice the brioche rolls in half, then toast and butter them.
  • Pan-fry the pork sausages until golden brown and cooked through.
  • Sauté the mushrooms with chopped rosemary until tender, then set aside.
  • Make the sausage sauce by combining aioli and Dijon mustard, stirring until smooth.
  • To assemble, spread the sauce on one side of each toasted bun. Layer on the mixed salad leaves, place a sausage in each bun, then top with relish, sautéed mushrooms, and a cornichon.

Note: You can easily make this a gluten-free version by using gluten-free buns.
