Pimped-Up Sausage Rolls

INGREDIENTS
- 4 good-quality pork sausages
- 200g Swiss brown mushrooms, sliced
- 1 teaspoon chopped rosemary
- 2 cups mixed salad leaves
- 4 long brioche buns, toasted and buttered
- ½ cup aioli
- ⅓ cup cornichons (mini pickles)
- 1 tablespoon Dijon mustard
- 1 tablespoon relish or sauce of choice
METHOD
- Slice the brioche rolls in half, then toast and butter them.
- Pan-fry the pork sausages until golden brown and cooked through.
- Sauté the mushrooms with chopped rosemary until tender, then set aside.
- Make the sausage sauce by combining aioli and Dijon mustard, stirring until smooth.
- To assemble, spread the sauce on one side of each toasted bun. Layer on the mixed salad leaves, place a sausage in each bun, then top with relish, sautéed mushrooms, and a cornichon.
Note: You can easily make this a gluten-free version by using gluten-free buns.
