Quick Vegetable Gnocchi

Ingredients list

  • 500g store-bought or homemade gnocchi, cooked
  • 1½ – 2 cups Napoli sauce (plus extra for topping)
  • 1 cup mushrooms, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated parmesan cheese
  • 1 fresh chilli, finely chopped (optional)
  • Salt & pepper, to taste
  • 1/2 cup shredded mozzarella or cheese of choice (for topping)
  • Fresh basil leaves, for topping and garnish

Method

  • Preheat the oven to 180°C (350°F).
  • In a baking dish, spread a layer of Napoli sauce on the base.
  • Add cooked gnocchi, followed by sliced mushrooms and cherry tomatoes.
  • Sprinkle with parmesan cheese, chopped chilli (if using), and season with salt and pepper.
  • Add another spoonful or two of Napoli sauce over the top.
  • Finish with shredded mozzarella and a few torn fresh basil leaves.
  • Bake for 20 minutes, or until the top is golden and bubbling.
  • Remove from the oven, garnish with more fresh basil, and serve warm.
