Ingredients list
- 500g store-bought or homemade gnocchi, cooked
- 1½ – 2 cups Napoli sauce (plus extra for topping)
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup grated parmesan cheese
- 1 fresh chilli, finely chopped (optional)
- Salt & pepper, to taste
- 1/2 cup shredded mozzarella or cheese of choice (for topping)
- Fresh basil leaves, for topping and garnish
Method
- Preheat the oven to 180°C (350°F).
- In a baking dish, spread a layer of Napoli sauce on the base.
- Add cooked gnocchi, followed by sliced mushrooms and cherry tomatoes.
- Sprinkle with parmesan cheese, chopped chilli (if using), and season with salt and pepper.
- Add another spoonful or two of Napoli sauce over the top.
- Finish with shredded mozzarella and a few torn fresh basil leaves.
- Bake for 20 minutes, or until the top is golden and bubbling.
- Remove from the oven, garnish with more fresh basil, and serve warm.
