Ingredients list
Cauliflower Steaks:
- 1 large head of cauliflower (cut into 4 thick slices)
- Olive oil, for drizzling
- Salt, to taste
Yogurt Dressing:
- 3 tbsp Greek yogurt
- 1 tsp honey
- 1 garlic clove, minced
- A pinch of sumac
Herb-Onion Garnish:
- ½ red onion, finely sliced
- 1 tsp sumac
- Juice of ½ lemon
- 1 tbsp olive oil
- Salt, to taste
- Fresh herbs: parsley, mint, or coriander (chopped)
Method
- Preheat oven to 180°C (fan-forced).
- Carefully slice the cauliflower into 4 thick steaks. Place on a lined baking tray.
- Drizzle the cauliflower with olive oil and season with a couple of pinches of salt.
- Roast in the preheated oven for 25 minutes, or until golden and tender.
- Meanwhile, prepare the yogurt dressing: in a small bowl, combine Greek yogurt, honey, minced garlic and a pinch of sumac. Mix well and set aside.
- For the garnish, toss sliced onions with sumac, lemon juice, olive oil, salt, and chopped fresh herbs. Let sit for a few minutes to marinate and soften slightly.
- To serve: spread yogurt dressing on a serving plate or directly over the warm cauliflower steaks. Top with the herbed onion garnish.
- Finish w ith a drizzle of olive oil and an extra sprinkle of sumac, if desired.
