Roasted Cauliflower Steaks with Sumac Yogurt & Herb-Onion Garnish

Ingredients list

Cauliflower Steaks:
  • 1 large head of cauliflower (cut into 4 thick slices)
  • Olive oil, for drizzling
  • Salt, to taste
Yogurt Dressing:
  • 3 tbsp Greek yogurt
  • 1 tsp honey
  • 1 garlic clove, minced
  • A pinch of sumac
Herb-Onion Garnish:
  • ½ red onion, finely sliced
  • 1 tsp sumac
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • Salt, to taste
  • Fresh herbs: parsley, mint, or coriander (chopped)

Method

  • Preheat oven to 180°C (fan-forced).
  • Carefully slice the cauliflower into 4 thick steaks. Place on a lined baking tray.
  • Drizzle the cauliflower with olive oil and season with a couple of pinches of salt.
  • Roast in the preheated oven for 25 minutes, or until golden and tender.
  • Meanwhile, prepare the yogurt dressing: in a small bowl, combine Greek yogurt, honey, minced garlic and a pinch of sumac. Mix well and set aside.
  • For the garnish, toss sliced onions with sumac, lemon juice, olive oil, salt, and chopped fresh herbs. Let sit for a few minutes to marinate and soften slightly.
  • To serve: spread yogurt dressing on a serving plate or directly over the warm cauliflower steaks. Top with the herbed onion garnish.
  • Finish w ith a drizzle of olive oil and an extra sprinkle of sumac, if desired.
