Rocket and Beetroot salad

Salad- 4 cups Rocket - washed
- 1 can beetroot- drained
- 2 tbsp pine nuts - toasted
- ½ cup goats cheese
- ¼ cup lemon juice
- 1 tbsp Dijon mustard
- ¼ cup olive oil
- 1 tbsp salt
- ¼ tbsp pepper
Method
- In a bowl, combine the dressing ingredients and whisk (or shake) thoroughly to emulsify.
- In a separate serving dish, arrange rocket, beetroot, pine nuts, and goat cheese.
- Drizzle the dressing over the salad just before serving.
