Smashed Avo on Toast

Ingredients list

  • 2 slices of bread (your choice – sourdough, rye, etc.)
  • Olive oil, for brushing and drizzling
  • 1 ripe avocado
  • 2 tablespoons goat’s cheese
  • Juice of 1/2 lemon (plus extra wedges to serve)
  • 1/2 cup fresh rocket (arugula)
  • 2 tablespoons toasted pine nuts
  • Balsamic glaze, to drizzle
  • Fresh basil, chopped
  • Chilli flakes, to taste
  • Salt and pepper, to taste

Method

  • Toast the Bread: Lightly brush both sides of your bread slices with olive oil. Toast in a frypan over low heat until golden and crispy on both sides. Set aside.
  • Make the Avo Smash: strong> In a bowl, mash the avocado with goat’s cheese and lemon juice. Season with salt and pepper to taste.
  • Assemble: strong> Spread the avocado mixture generously over the toasted bread. Top with fresh rocket, toasted pine nuts, and a squeeze of fresh lemon. Drizzle with balsamic glaze and a little olive oil.
  • Finish with a sprinkle of chopped basil and chilli flakes.
