Ingredients list
- 2 slices of bread (your choice – sourdough, rye, etc.)
- Olive oil, for brushing and drizzling
- 1 ripe avocado
- 2 tablespoons goat’s cheese
- Juice of 1/2 lemon (plus extra wedges to serve)
- 1/2 cup fresh rocket (arugula)
- 2 tablespoons toasted pine nuts
- Balsamic glaze, to drizzle
- Fresh basil, chopped
- Chilli flakes, to taste
- Salt and pepper, to taste

Toast the Bread: Lightly brush both sides of your bread slices with olive oil. Toast in a frypan over low heat until golden and crispy on both sides. Set aside.

Make the Avo Smash: strong> In a bowl, mash the avocado with goat’s cheese and lemon juice. Season with salt and pepper to taste.

Assemble: strong> Spread the avocado mixture generously over the toasted bread. Top with fresh rocket, toasted pine nuts, and a squeeze of fresh lemon. Drizzle with balsamic glaze and a little olive oil.
- Finish with a sprinkle of chopped basil and chilli flakes.
