Smashed Pea & Avocado Toast

Ingredients list

  • 2 slices of multigrain bread
  • 130g ripe avocado
  • 100g frozen peas
  • 1 tbsp nutritional yeast
  • ¼ tsp chilli flakes (adjust to taste)
  • Salt & black pepper, to taste
  • A few mint leaves or a small handful of rocket
  • 2 slices of your favourite cheese (cheddar or tasty works well)

Method

  • Bring a small pot of water to a boil. Add frozen peas and cook for 2–3 minutes until tender. Drain and rinse under cold water to cool quickly.
  • In a bowl, mash together the avocado and peas until mostly smooth, leaving some texture. Stir in nutritional yeast, chilli flakes, salt and pepper.
  • Toast the multigrain bread to your liking. While still warm, place a slice of cheese on each toast to slightly melt.
  • Spoon the pea and avo mixture generously over the cheesy toast. Top with fresh mint leaves or rocket.
  • Finish with an extra pinch of chilli flakes or cracked pepper, if desired.
