Ingredients list
- 2 slices of multigrain bread
- 130g ripe avocado
- 100g frozen peas
- 1 tbsp nutritional yeast
- ¼ tsp chilli flakes (adjust to taste)
- Salt & black pepper, to taste
- A few mint leaves or a small handful of rocket
- 2 slices of your favourite cheese (cheddar or tasty works well)
Method
- Bring a small pot of water to a boil. Add frozen peas and cook for 2–3 minutes until tender. Drain and rinse under cold water to cool quickly.
- In a bowl, mash together the avocado and peas until mostly smooth, leaving some texture. Stir in nutritional yeast, chilli flakes, salt and pepper.
- Toast the multigrain bread to your liking. While still warm, place a slice of cheese on each toast to slightly melt.
- Spoon the pea and avo mixture generously over the cheesy toast. Top with fresh mint leaves or rocket.
- Finish with an extra pinch of chilli flakes or cracked pepper, if desired.
