Ingredients list
- 1 tub (200–250g) store-bought hummus
- 1/2 cup roasted eggplant (store-bought or homemade)
- 1/2 cup roasted red capsicum, sliced
- 1/4 cup green olives, chopped
- 1/3 cup cooked chickpeas (canned is fine)
- 1 tablespoon olive oil, for drizzling
- 2 tablespoons salad sprinkle (toasted seeds & nuts mix)
- Crackers of your choice, to serve
Method
- In a large shallow bowl or serving plate, spread out the hummus evenly with the back of a spoon.
- Layer over the roasted eggplant , roasted red capsicum , chopped green olives ,and chickpeas.
- Drizzle generously with olive oil.
- Sprinkle over your salad sprinkle for crunch and texture.
- Serve immediately with your favourite crackers on the side for dipping.
