Summer Cabbage Salad

Ingredients list

  • 1/8 head of cabbage, shredded
  • 4 small radishes, shredded
  • ¼ cup shredded parsley
  • ½ cup chopped spring onions
  • ¼ cup chopped fresh mint
  • ⅔ cup shaved Parmesan cheese
  • 1 teaspoon salt and pepper (or to taste)
  • 1 tablespoon toasted pine nuts (for serving)
For the Dressing:
  • ⅓ cup olive oil
  • 3 teaspoons honey
  • Juice of 2 lemons
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt and pepper

Method

  • Using a mandolin or a sharp kitchen knife, finely shred the cabbage and radish.
  • In a large bowl, combine the shredded cabbage and radish with the pine nuts, parsley, spring onions, fresh mint, and Parmesan cheese.
  • In a separate bowl, whisk together the dressing ingredients until well emulsified.
  • Toss the dressing through the cabbage salad mixture.
  • Transfer the salad to a serving bowl and top with toasted pine nuts and extra shaved Parmesan.
