Summer Trifle

Ingredients list

  • 1/2 cup double thick custard
  • 1/2 cup canned peaches, drained and roughly chopped
  • 2 tablespoons chopped walnuts
  • Whipped cream (store-bought or freshly whipped)
  • 1 Cadbury Flake bar (or similar), broken into small pieces
  • 2 fresh strawberries, sliced
  • Extra chopped walnuts (for topping)
  • 4 dipping biscuits (e.g., sponge fingers or savoiardi)

Method

  • In each champagne saucer, add a generous dollop of double thick custard as the base layer.
  • Spoon a layer of chopped canned peaches over the custard.
  • Add another layer of custard over the peaches.
  • Sprinkle with chopped walnuts for crunch.
  • Top with a generous swirl or spoonful of whipped cream.
  • Gently press in pieces of Flake chocolate and strawberry slices.
  • Sprinkle a little more chopped walnuts on top.
  • Insert two dipping biscuits into each trifle, standing upright. Use a little extra whipped cream to help secure them in place if needed.
