Yogurt Bark

Ingredients list

  • 1 cup Greek yoghurt (full-fat or thick-style preferred)
  • 1–2 tablespoons honey (to taste)
  • 2 tablespoons chopped walnuts
  • 2 tablespoons chopped almonds
  • 1/4 cup fresh blueberries
  • 1/4 cup fresh raspberries
  • 2 tablespoons dark chocolate chips
  • Dark chocolate, for grating

Method

  • In a mixing bowl, combine Greek yoghurt and honey. Stir until smooth and fully combined.
  • Line a baking tray with baking paper.
  • Spoon the yoghurt mixture onto the tray and spread it out evenly into a thin layer (about 1 cm thick).
  • Sprinkle over the chopped walnuts, almonds, blueberries, raspberries, and chocolate chips.
  • Grate a little dark chocolate over the top for extra flavour.
  • Place the tray in the freezer for at least 3 hours, or until completely firm.
  • Once frozen, remove from the freezer and break into large shards.
  • Serve immediately or store in an airtight container in the freezer.
