Zesty Easter Salmon

Ingredients list

  • 4 Fresh salmon fillets
  • 1 knob fresh ginger, finely grated
  • 2 shallots, finely sliced
  • Zest of 1 lime
  • 1 fresh red chilli, finely sliced
  • 2 coriander roots, cleaned and chopped
  • 2 spring onions, finely sliced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp ABC sweet soy sauce (kecap manis)
  • 1 tbsp peanut oil
  • 1 tsp fish sauce

Method

  • Preheat the oven to 180°C (350°F).
  • Line a baking tray with baking paper and place the salmon fillets on top.
  • Scatter grated ginger, sliced shallot, lime zest, fresh chilli, coriander root, and spring onion over the salmon.
  • Drizzle over the soy sauce, sesame oil, ABC sauce, peanut oil, and fish sauce.
  • Bake in the oven for 15–20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • To serve, top with extra sliced spring onion, a squeeze of fresh lime juice, chilli, fresh coriander, fried shallots, and an extra drizzle of ABC sauce and fresh chilli if desired. Serve with steamed rice, noodles, or a fresh salad.
